No-Bake Blueberry Cheesecake

Today I bring to you this recipe for an amazingly light and Airy Blueberry cheesecake!!

This cheesecake is made without any baking in the oven which means that it's a quick and easy recipe that's perfect for the summertime!

The blueberries are cooked until they're super concentrated in their own juices then added with a few other ingredients to a spring form pan that has a thick layer of rich chocolate cookie crust!

It's then popped into the freezer until it's ready to serve. Anybody and everybody will enjoy this delicious recipe!


Ingredients:

2 cups fresh or frozen blueberries

1 lemon juiced

1/2 cup sugar

-Cooked until thickened about 10 minutes

3 8 oz bars cream cheese

1 cup heavy cream

1/2 cup sugar

1 teaspoon vanilla


Crust:

1/4 cup butter

35 oreo cookies


In a small sauce pan add the blueberries with sugar and lemon juice and cook about 10 minutes. Place aside to cool.

To make the crust, simply crush the cookies and mix with butter. Place them into your pie or spring form pan and press them down with a cup to form the crust.



To make the cheesecake, whip the whipped-cream on high until firm peeks form. Place to the side and beat the room temperature cream cheese, sugar and vanilla until light and fluffy.

Add the whipped-cream and blueberries and fold into the cream cheese.

Place into your pie crust and freeze until you're ready to serve.
