Mediterranean Chicken

This Greek style chicken is the perfect dinner! It has that crispy chicken skin with the saltiness of the artichoke hearts/ olives and the bright citrus taste of lemon juice. This dinner super healthy, it's made with cauliflower and cherry tomatoes, everybody will be in aw when you serve this skillet up on the dinner table!

Ingredients:


4-8 chicken thighs

1 lemon juiced

2 tablespoon Greek seasoning

2 tablespoons olive oil

2 cloves crushed garlic

1 chopped onion

1 cup cherry tomatoes

14 oz artichoke hearts

1/2 cup green olives

1 cauliflower


Directions:

Marinate the chicken in the lemon juice, Greek seasoning and olive oil.

Add the thighs to the pan and cook until fully done about 15 minutes.

Remove the thighs to the side and place the chopped onion to the pan and fry until translucent. Add the garlic, artichokes, olives, tomatoes and cauliflower and 1/4 cup water.

Cover and steam the cauliflower until done. Depending on how bit the pieces are cut it could take 5-10 minutes. Place the chicken back into the pan after and heat the chicken up until its reheated.
