Russian Potato Salad

This Russian style potato salad is so incredibly delicious, it's loaded with tender vegetables and creamy potatoes. It also has a nice crunch from the tiny pieces of celery and onion! Give it a try and you will forever be hooked!


Ingredients:

5-6 Russet potatoes peeled and chopped

1 Cup chopped green beans

1/2 cup peeled and chopped carrot

1/2 cup celery

1 white onion chopped

1 Tablespoon mustard

About 1 cup Best Foods mayonnaise

1/2 bunch Fresh parsley

Salt & Pepper to taste


To prepare the Russian potato salad, peel and chop the potatoes in small squares. Place the chopped potatoes into a large pot with the chopped green beans and peeled and chopped carrots. Make sure that all are cut around the same size so they will all cook evenly. Fill the pot with water and bring the vegetables to a boil. Cook for around fifteen minutes and test with a fork to make sure they are all soft. Once all the vegetables are soft, drain out all the water and place the potato mixture into a large mixing bowl. Add the celery cut into small pieces, chopped white onion and chopped parsley. Add enough Mayonnaise to coat all the vegetables. Lastly add the tablespoon of mustard and season to taste with salt and pepper.
