Savory cheesecake

Today I wanted to share with you all this recipe for my famous savory cheesecake! It always catches everybody by surprise because they expect it to be sweet when I tell them it's a cheesecake. But when they see the cherry tomatoes on top they always wonder how it will taste. They are always pleasantly surprised because it is so rich and delicious and the tomato mixture on top is so juicy and flavorful, you'll want to eat seconds and thirds!

Ingredients:

Crust:

2 cups crushed crackers (such as Keebler's CLUB)

6 Tablespoons melted butter

Cheesecake:

2 Bars 8 oz softened cream cheese

1/3 sour cream

2 green onions

1 cup shredded cheese of choice

1 egg

Tomatoes Mixture:

1 cup cherry tomatoes

2 Tablespoons olive oil

2 Tablespoons Red wine vinegar

Garlic salt

or

Fresh garlic

& sprinkle of salt

To prepare the crust simply crush the crackers lightly in a bag and mix the melted butter inside.

Add it to a cake pan, I used an 8 inch circle.

Firmly press the crackers down onto the pan to form its crust. Place to the side.

Combine all the ingredients for the cheesecake in a bowl and add it to your prepared crust.

Bake for 45-50 minutes until top is slightly golden brown and cheesecake has puffed up a bit.

Allow it to cool and add the sliced tomatoes with the olive oil/vinegar mixture and serve chilled
