Gingerbread Waffles with Banana Cream Sauce

Ingredients for waffles:

2 cups all purpose flour

1/4 cup sugar

3 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon each; cinnamon

allspice

nutmeg

ground ginger

3/4 cup milk

1/3 cup molasses

1/3 cup oil


Sift together dry ingredients. Beat the eggwhite in a seperate bowl until firm peaks form. Beat eggyolks, molasses and milk and oil. Fold everything together with the dry ingredients.




Banana sauce:

2 ripe bananas

1 tablespoon lemon juice

1/2 cup whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla


Crush the bananas and put them through a sieve; add the lemon juice and mix together. Add the cream and beat hard with a whisk.

Add the vanilla and sugar and continue to whip until consistency is of thick cream. Enjoy!
